I have a Navman Pin100 / aka mitec 168. My question is how do configure the gps setting so i can use other gps mapping software.

Whats a good compatible gps software. I'm interested in one that have POI according to your location(no zip code needed) like said for example i need to get to the nearest mcdonals.

My current gps software does not offer this (SmartST v2)

Finally any trics, tips or must have utilities for a pocket pc.

I'm not sure exactly, I've never used that specific PPC, but the GPS receiver should be setup on a COM port. You should be able to use any GPS software if you know the COM number and Baud rate. And at least some if you don't. My only experience is with Mapopolis, and it can be set to Auto-Detect the COM and Baud for you. Mapopolis does have POI, but not McDonalds. It has things like Parks, Airports, Hospitals, etc. You can get Mapopolis for free to see if it works on the PPC, along with trial maps to see if the POI are satisfactory.
